The moment you see Lachlan Morris working the bottles and glasses at Jet, you realise that he is not your average bartender. Lachlan takes the art of flair bartending to a whole new level. But he isn’t just about juggling the elements of his trade up in the air. In the end, the quality of the drink is as important as the entertainment that goes into its creation. It’s safe to say that this lad from Down Under has mastered both.
Lachlan grew up in Sydney and developed an interest in photography, but the lure of bartending and its social benefits were too great to resist. He got his license through a 10-week course and basic bartending in his home city, which lasted a year before he felt ready to spread his wings.
His first stop was a cocktail bar in Vancouver where charm got him the job, but his lack of experience was soon revealed when a customer requested a Vodka Martini with a twist and Lachlan was left scratching his head. The owner was understandably unimpressed, but when his new employee asked for a chance to learn and work hard, he relented. This led to a two-year stint in Canada.
Thanks to a young lady from Dundee (there’s a limerick in there somewhere), he hopped the pond to find a job in Scotland. The relationship didn’t last but the position did and he spent three years in a student cocktail bar, working his way up to assistant manager. In this time he went to see a flair show in Glasgow and the moment he witnessed the pageantry, he was hooked. He began the important yet sometimes painful process of teaching himself the skills. Much milk was literally spilt as he embarrassed himself over six months, dropping bottles and highballs (alive, alive-o). His talent improved but the Scottish weather did not and so he moved back to Sydney to chase the sun.
He was hired to work at the famous Argyle bar on the Rocks in Sydney. Here he trained with the Oz flair bartending champion, and whilst by the end of his year at The Argyle his flair was really becoming something to behold, his mixology needed some work. On to the multi-award winning bar Zeta’s, which was like entering bartending boot camp. Lachlan went straight into the world of foams, jellies, liquid nitrogen and platters. It was an intense experience, working 50 hours a week and 20 hours of flair, but boy did it pay off. By the time he was ready to leave Zeta’s he had become a bartender to reckon with.
He started scanning the Internet for jobs out in the wide world and came across Zeros club in the Greek Islands. The club was hopping in the season, but dead in the quiet period and so Lachlan moved on to Lola’s in Amsterdam to learn even more flair moves.
Thanks to connections made at Zeros, Lachlan got offered a job at a new nightclub in the Cayman Islands. In December 2009 he moved to Grand Cayman and prepared for the opening of Jet Nightclub on West Bay Road.
